- Olive oil – 2 tbsp / 30 ml
- Salt – to taste
- Black pepper – to taste
Instructions
- In a large saucepan over medium heat, warm the olive oil and melt the butter.
- Add the Arborio rice and stir well to coat each grain with the oil and butter. Sauté for 2-3 minutes until the rice becomes slightly translucent.
- Gradually add the chicken broth, a ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding the next.
- Continue this process for about 18-20 minutes, until the rice is al dente and creamy.
- Remove from heat and stir in the Genovese pesto until well combined.
- Add the grated Parmesan cheese, stirring until melted and integrated into the risotto.
- Season with salt and freshly ground black pepper to taste. Serve immediately.
