Ingredients

  • beef chuck, cut into 1-inch cubes – 2 pounds / 900 g
  • onions, finely sliced – 3 large / 600 g
  • garlic cloves, minced – 4 cloves
  • sweet Hungarian paprika – 3 tablespoons
  • caraway seeds – 1 teaspoon
  • dried marjoram – 1 teaspoon
  • tomato paste – 2 tablespoons
  • beef stock – 3 cups / 720 ml
  • salt – to taste
  • black pepper – to taste
  • vegetable oil – 2 tablespoons
  • white vinegar – 1 tablespoon

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add sliced onions and cook until deeply caramelized, about 20 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Stir in beef cubes and sear on all sides until browned.
  4. Sprinkle in the sweet paprika, caraway seeds, and marjoram, stirring well to coat the beef evenly.
  5. Add tomato paste and cook for another 2 minutes to deepen the flavor.
  6. Pour in beef stock and white vinegar, stirring to combine. Season with salt and pepper.
  7. Bring the mixture to a boil, then reduce heat to low and cover. Simmer gently for 2-3 hours or until beef is tender and the sauce has thickened.
  8. Adjust seasoning to taste before serving.
