Ingredients
- rice field mouse – 1 kg / approx. 8-10 mice
- lemongrass – 5 stalks, minced
- garlic – 6 cloves, minced
- shallots – 4, sliced
- fish sauce – 3 tbsp / 45 ml
- soy sauce – 2 tbsp / 30 ml
- honey – 2 tbsp / 30 ml
- black pepper – 1 tsp / 5 g
- chili powder – 1 tsp / 5 g
- lime juice – 2 tbsp / 30 ml
- fresh cilantro – 1 bunch, chopped
Instructions
- Clean the rice field mice thoroughly and remove any internal organs. Rinse well in cold water.
- In a bowl, combine the lemongrass, garlic, shallots, fish sauce, soy sauce, honey, black pepper, chili powder, and lime juice to create a marinade.
- Coat the mice thoroughly with the marinade and let them marinate in the refrigerator for at least 2 hours.
- Preheat the clay vase or oven to 180°C (356°F).
- Place the marinated mice inside the vase. Ensure they are evenly spread out.
- Roast in the clay vase for about 1.5 hours, basting occasionally with remaining marinade.
- Remove from the vase and serve hot, garnished with fresh chopped cilantro.
