Ingredients
- green bananas (or green plantains) – 4 pieces
- white onion – 1 large, diced
- garlic cloves – 3 cloves, minced

- water – 4 cups / 960 ml
- whole milk – 2 cups / 480 ml
- fresh cheese (queso fresco) – 1 cup / 150 g, crumbled
- fresh cilantro – 1/4 cup / 15 g, chopped
- salt – to taste
- black pepper – to taste
Instructions
- Peel and slice the green bananas or plantains into rounds.
- In a large pot, heat the vegetable oil over medium heat. Add the diced onion and cook until translucent.
- Add the minced garlic and sauté for another minute until fragrant.
- Pour in the water and bring to a gentle boil. Add the banana slices, reducing the heat to a simmer.
- Cook for 20-25 minutes until the bananas are tender, then mash them slightly in the pot to thicken the soup.
