  • butter – 2 tbsp / 30 g
  • garlic – 2 cloves, minced
  • fresh thyme – 4 sprigs
  • beef stock – 1 cup / 240 ml
  • red wine – 1/2 cup / 120 ml
  • cream – 1/4 cup / 60 ml
  • shallots – 2, finely chopped

Instructions

  1. Season the reindeer steaks with salt, pepper, and crushed juniper berries.
  2. Heat olive oil in a skillet over medium-high heat and sear the steaks on each side for about 3-4 minutes for medium-rare, adding butter, garlic, and thyme halfway through.
  3. Remove steaks and let rest.
  4. In the same skillet, add shallots and sauté until translucent.
  5. Deglaze with red wine, scraping up any browned bits, and reduce by half.
  6. Add beef stock and bring to a simmer.
  7. Stir in cream and cook until the sauce thickens slightly.
