Ingredients

  • rechta (homemade or store-bought) – 500 g
  • chicken (cut into pieces) – 1.5 kg
  • onion (finely chopped) – 1 large / 200 g
  • olive oil – 2 tbsp / 30 ml
  • cinnamon stick – 1 piece
  • ground turmeric – 1 tsp / 5 g
  • chickpeas (canned) – 1 cup / 150 g
  • water – 4 cups / 960 ml
  • salt – to taste
  • black pepper – to taste
  • fresh cilantro (garnish) – a small bunch
  • lemon (cut into wedges) – 1

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the chicken pieces and cook until they are browned on all sides.
  3. Introduce the cinnamon stick and turmeric, stirring to coat the chicken well with the spices.
  4. Add water and chickpeas to the pot. Season with salt and black pepper.
  5. Bring to a boil, then reduce heat to low and let simmer for about 45 minutes, until the chicken is cooked through and tender.
  6. In a separate pot, boil water and cook the rechta noodles according to package instructions until al dente. Drain and set aside.
  7. Serve the cooked rechta topped with the chicken and chickpea mixture. Garnish with fresh cilantro and a squeeze of lemon juice.
