Ingredients
- rechta (homemade or store-bought) – 500 g
- chicken (cut into pieces) – 1.5 kg
- onion (finely chopped) – 1 large / 200 g
- olive oil – 2 tbsp / 30 ml
- cinnamon stick – 1 piece
- ground turmeric – 1 tsp / 5 g
- chickpeas (canned) – 1 cup / 150 g
- water – 4 cups / 960 ml
- salt – to taste
- black pepper – to taste
- fresh cilantro (garnish) – a small bunch
- lemon (cut into wedges) – 1
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
- Add the chicken pieces and cook until they are browned on all sides.
- Introduce the cinnamon stick and turmeric, stirring to coat the chicken well with the spices.
- Add water and chickpeas to the pot. Season with salt and black pepper.
- Bring to a boil, then reduce heat to low and let simmer for about 45 minutes, until the chicken is cooked through and tender.
- In a separate pot, boil water and cook the rechta noodles according to package instructions until al dente. Drain and set aside.
- Serve the cooked rechta topped with the chicken and chickpea mixture. Garnish with fresh cilantro and a squeeze of lemon juice.
