Instructions

  1. Make the pasta dough: On a clean surface, form a mound with the flour. Make a well in the center and add eggs. Gradually mix with a fork, incorporating the flour into the eggs until a dough forms.
  2. Knead the dough for 10 minutes until smooth. Wrap in plastic and rest for 30 minutes.
  3. Prepare the filling: In a bowl, mix ricotta, Parmesan, mozzarella, nutmeg, and a pinch of salt until combined.
  4. Roll out the pasta dough thinly. Cut into 2-inch squares or circles.
  5. Place a teaspoon of filling onto each square. Moisten the edges with a little water, fold over, and seal tightly. Ensure there are no air bubbles.
  6. Cook ravioli in boiling salted water for 3-4 minutes. Drain.
  7. Warm tomato sauce and serve over ravioli with a drizzle of olive oil and basil leaves.
