- fresh eel, cleaned and cut into pieces – 1.5 pounds / 680 g
- raštika (or kale), chopped – 1 pound / 450 g

- onion, finely chopped – 1 large / 150 g
- white wine – 1 cup / 240 ml
- vegetable or fish broth – 2 cups / 480 ml
- salt – to taste
- pepper – to taste
- bay leaves – 2
Instructions
- Heat olive oil in a large pan over medium heat.
- Add chopped onion and minced garlic, sauté until translucent.
- Place eel pieces into the pan, cook until slightly browned on each side.
- Pour in the white wine and allow it to simmer until reduced by half.
- Add chopped raštika and stir to combine with the eel and onions.
- Pour in the broth and add bay leaves, bring to a gentle simmer.
- Season with salt and pepper, cover the pan, and cook for 25-30 minutes, or until eel is tender and raštika is cooked through.
- Remove bay leaves before serving.
