Ingredients
- beef shank – 2 lbs / 900 g
- carrots – 2 large / 200 g, peeled and cut into chunks
- celery root – 1 small / 150 g, peeled and diced
- parsnips – 2 medium / 160 g, peeled and sliced
- potatoes – 4 medium / 500 g, peeled and halved
- onions – 2 large / 300 g, quartered
- garlic cloves – 4, peeled
- bay leaves – 2
- peppercorns – 1 tbsp / 10 g
- salt – 2 tsp / 10 g
- water – 12 cups / 3 liters
Instructions
- In a large pot, add water and beef shank. Bring to a slow boil while skimming impurities from the surface.
- Add carrots, celery root, parsnips, potatoes, onions, and garlic cloves to the pot.
- Season with bay leaves, peppercorns, and salt.
- Reduce to a simmer and cook for about 2-3 hours, or until the meat is tender and falls off the bone.
- Serve hot, ensuring each bowl has a portion of meat and vegetables. Traditionally, you may offer bread or polenta alongside.
