Ingredients
- red kidney beans (rajma) – 2 cups / 400 g, soaked overnight
- water – 5 cups / 1.2 liters
- onion – 2 medium, finely chopped
- tomatoes – 3 large, pureed
- ginger garlic paste – 2 tablespoons
- green chili – 1, chopped
- cumin seeds – 1 teaspoon
- red chili powder – 1 teaspoon
- turmeric powder – 1/2 teaspoon
- garam masala – 1 teaspoon
- coriander powder – 1 tablespoon
- salt – to taste
- oil or ghee – 3 tablespoons
- fresh coriander leaves – for garnish
Instructions
- Rinse the soaked kidney beans thoroughly. In a pressure cooker or large pot, add the beans along with 5 cups of water. Cook until the beans are tender; this could take about 20-25 minutes in a pressure cooker.
- Heat oil or ghee in a pan. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Add ginger garlic paste and green chili; sauté until the raw smell disappears.
- Stir in the tomato puree and cook until the oil separates from the mixture.
- Mix in red chili powder, turmeric powder, coriander powder, and salt. Cook for another 2 minutes.
- Add the cooked kidney beans along with any residual cooking water. Let it simmer on low heat for at least 30 minutes for the flavors to meld together. Adjust the water if necessary to achieve a stew-like consistency.
- Add garam masala and let it cook for another 5 minutes before removing from heat.
- Garnish with fresh coriander leaves and serve hot with rice or bread of choice.
