Ingredients
- Fasolari (Venus clams) – 1 kg / 2.2 lbs
- Extra virgin olive oil – 3 tbsp / 45 ml
- Garlic – 3 cloves, minced
- Cherry tomatoes – 300 g / 10.5 oz, halved
- Dry white wine – 150 ml / 2/3 cup
- Fresh parsley – A handful, chopped
- Salt – To taste
- Black pepper – To taste
- Linguine pasta – 400 g / 14 oz
Instructions
- Scrub and rinse the fasolari thoroughly under cold water to remove any sand.
- In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the cherry tomatoes to the pan and cook for 5-7 minutes until softened.
- Pour in the white wine and let it simmer for 2 minutes to cook off the alcohol.
- Add the fasolari to the pan, cover, and cook for 5 minutes, or until the clams have opened.
- Remove any clams that have not opened after cooking. Season the sauce with salt and pepper to taste.
- In a separate pot, cook the linguine according to the package instructions until al dente. Reserve a cup of the pasta water.
- Add the cooked linguine to the pan with the clams. Toss to combine, adding a bit of the reserved pasta water if necessary to loosen the sauce.
- Sprinkle the chopped parsley over the pasta before serving.
