Ingredients

  • pumpkin or butternut squash – 1 kg / 2.2 lbs
  • onion – 1 large, chopped
  • garlic cloves – 4, minced
  • olive oil – 2 tbsp / 30 ml
  • coconut milk – 1 cup / 240 ml
  • vegetable broth – 1 cup / 240 ml
  • coriander (cilantro) – 1/4 cup / 15 g, chopped
  • ground cumin – 1 tsp / 2 g
  • ground nutmeg – 1/4 tsp / 0.5 g
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Peel and cube the pumpkin or butternut squash.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  3. Stir in minced garlic and cook for an additional minute.
  4. Add cubed pumpkin, coconut milk, and vegetable broth to the pot. Bring to a simmer.
  5. Season with ground cumin, nutmeg, salt, and black pepper.
  6. Cover and cook over low heat for 30-40 minutes or until the pumpkin is tender and creamy.
  7. Use a potato masher or immersion blender to partially mash the mixture for a thicker consistency.
  8. Garnish with chopped coriander before serving.
