Ingredients
- Chihuahua cheese – 2 cups / 200 g
- Chorizo – 8 oz / 225 g
- Onion, chopped – 1/2 cup / 75 g
- Poblano pepper, diced – 1 / 120 g
- Garlic, minced – 2 cloves
- Olive oil – 1 tbsp
- Salt – 1/4 tsp
- Black pepper – 1/4 tsp
- Tortilla chips – for serving
Instructions
- Preheat the oven to 375°F (190°C).
- In an oven-safe skillet, heat the olive oil over medium heat. Add chopped onion and diced poblano pepper, sauté until soft, about 5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Add chorizo to the skillet, breaking it apart with a spatula, and cook until browned and fully cooked, about 7 minutes.
- Drain excess fat from the skillet, if necessary.
- Stir in the Chihuahua cheese until it melts and is fully combined with the chorizo mixture.
- Season with salt and black pepper.
- Transfer skillet to the preheated oven and bake for 10-12 minutes, or until the cheese is bubbly and golden brown.
- Serve immediately with tortilla chips for dipping.
