Ingredients

  • Chihuahua cheese – 2 cups / 200 g
  • Chorizo – 8 oz / 225 g
  • Onion, chopped – 1/2 cup / 75 g
  • Poblano pepper, diced – 1 / 120 g
  • Garlic, minced – 2 cloves
  • Olive oil – 1 tbsp
  • Salt – 1/4 tsp
  • Black pepper – 1/4 tsp
  • Tortilla chips – for serving

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In an oven-safe skillet, heat the olive oil over medium heat. Add chopped onion and diced poblano pepper, sauté until soft, about 5 minutes.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Add chorizo to the skillet, breaking it apart with a spatula, and cook until browned and fully cooked, about 7 minutes.
  5. Drain excess fat from the skillet, if necessary.
  6. Stir in the Chihuahua cheese until it melts and is fully combined with the chorizo mixture.
  7. Season with salt and black pepper.
  8. Transfer skillet to the preheated oven and bake for 10-12 minutes, or until the cheese is bubbly and golden brown.
  9. Serve immediately with tortilla chips for dipping.
