Ingredients
- all-purpose flour – 2 cups / 240 g
- unsalted butter – 1/2 cup / 115 g
- yogurt – 1/2 cup / 120 ml
- egg yolks – 2
- baking powder – 1 tsp / 4 g
- sugar – 1/4 cup / 50 g
- cardamom powder – 1 tsp / 2 g
- crushed almonds – 1 cup / 150 g
- powdered sugar – As needed for dusting
- rosewater – 2 tbsp / 30 ml
- vegetable oil – For deep frying
Instructions
- In a large mixing bowl, combine all-purpose flour and baking powder.
- Melt the unsalted butter and allow it to cool slightly. Add it to the flour mixture along with yogurt, egg yolks, and sugar. Mix until a soft dough forms.
- Wrap the dough in plastic wrap and let it rest for 1 hour.
- For the filling, mix crushed almonds with cardamom powder, rosewater, and additional sugar.
- Roll out the dough on a floured surface to about 1/8 inch thick. Cut out circles using a round cutter.
- Place a small spoonful of almond filling on each circle. Fold over to form a crescent shape and press the edges to seal.
- Heat vegetable oil in a deep fryer or large saucepan to 350°F (175°C). Fry the pastries in batches until golden brown, about 3-4 minutes.
- Remove with a slotted spoon and drain on paper towels.
- Once cool, dust generously with powdered sugar.
