Qifqi is a traditional Albanian appetizer, originating from the picturesque region of Gjirokastër. These delightful rice balls are a testament to the simplicity and resourcefulness found in Balkan cuisine. Traditionally served during festive occasions, Qifqi feature a delicate balance of herbs and aromatic spices, encased in tender, savory balls that are cooked to golden perfection. This dish is cherished for its ability to highlight the subtle flavors of fresh ingredients, transforming humble rice into an extraordinary gastronomic experience.

Ingredients

  • Short-grain rice – 2 cups / 400 g
  • Water – 4 cups / 960 ml
  • Eggs – 2 large
  • Chopped fresh parsley – 1/4 cup / 15 g
  • Chopped fresh mint – 2 tbsp / 6 g
  • Salt – 1 tsp / 5 g
  • Ground black pepper – 1/2 tsp / 1 g
  • Olive oil – 4 tbsp / 60 ml

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a pot, bring 4 cups of water to a boil. Add the rice and a pinch of salt, then reduce the heat to low, cover, and let it simmer for 15-20 minutes or until the rice is cooked and the water absorbed.
  3. Let the cooked rice cool for about 10 minutes.
  4. In a large bowl, beat the eggs, salt, and pepper together. Add the cooked rice, parsley, and mint. Mix thoroughly to combine all the ingredients.
  5. Shape the rice mixture into small balls, about the size of a golf ball.
  6. Heat the olive oil in a large skillet over medium heat.
  7. Fry the rice balls in batches, turning them occasionally, until they are golden brown on all sides, about 6-8 minutes.
  8. Drain the cooked Qifqi on paper towels and serve warm.

  • Fresh parsley -> Cilantro
  • Fresh mint -> Basil
