Traditionally served during festive occasions, its savory, umami flavor delights the palate, embodying the essence of island living.

Ingredients

  • salted fish (tuna or grouper) – 500 g / 1.1 lbs
  • onions – 2 medium, thinly sliced
  • tomatoes – 3 large, chopped
  • bell pepper – 1 large, chopped
  • garlic cloves – 3, minced
  • fresh thyme – 2 sprigs
  • coconut milk – 1 cup / 240 ml
  • vegetable oil – 2 tbsp
  • lemon juice – 2 tbsp
  • black pepper – to taste
  • water – as needed

Instructions

  1. Rinse the salted fish thoroughly to remove excess salt, then soak in water for 30 minutes. Drain and pat dry.
  2. In a large pan, heat the vegetable oil over medium heat. Add the onions and sauté until translucent.
  3. Stir in the garlic, tomatoes, and bell pepper. Cook until the tomatoes soften.
  4. Add the salted fish to the pan and cook for about 5 minutes, stirring occasionally.
  5. Pour in the coconut milk, add the thyme and lemon juice, and simmer for 10-15 minutes until the fish is tender.
  6. Season with black pepper to taste and serve hot with rice or breadfruit.
