Ingredients

  • Large white beans – 1 cup / 200 g
  • Corn kernels – 1 cup / 150 g
  • Fava beans – 1 cup / 200 g
  • Bay leaves – 2 leaves
  • Onion – 1 medium, chopped
  • Garlic – 3 cloves, minced
  • Cumin – 1 teaspoon
  • Olive oil – 2 tablespoons
  • Salt – to taste
  • Black pepper – to taste
  • Cilantro – 1/4 cup, chopped
  • Aji Amarillo paste – 1 tablespoon

Instructions

  1. Soak the white beans and fava beans overnight in separate bowls.
  2. Drain the beans and rinse them well.
  3. In a large pot, add soaked beans, corn kernels, bay leaves, and enough water to cover. Bring to a boil, then reduce to a simmer.
  4. Cook for about 25-30 minutes until the beans are tender.
  5. In a skillet, heat olive oil over medium heat. Add onion and garlic, cooking until softened, about 5 minutes.
  6. Stir in cumin and Aji Amarillo paste, cook for another minute.
  7. Combine the onion mixture with the beans in the pot, season with salt and pepper.
  8. Garnish with chopped cilantro before serving.
