Pupusas are a cherished traditional dish from El Salvador, often considered the national food. Ingredients
- masa harina – 2 cups / 240 g
- warm water – 1 1/2 cups / 360 ml
- salt – 1 teaspoon / 5 g
- shredded mozzarella cheese – 1 cup / 100 g
- refried beans – 1 cup / 240 g
- cooked pork, shredded – 1 cup / 200 g
- vegetable oil – for cooking
Instructions
- In a large bowl, combine masa harina and salt, then gradually add warm water. Mix until the dough is smooth and pliable.
- Divide the dough into 8-10 equal pieces, rolling each into a ball.
- Flatten each ball into a disc, about 1/4 inch thick.
- Fill the center of each disc with about 1 tablespoon of cheese, beans, and pork.
- Carefully fold the edges over the filling, pinching to seal. Flatten gently.
- Heat a large skillet over medium heat and add vegetable oil.
- Cook each pupusa for 3-4 minutes on each side until golden brown and cooked through.
- Serve hot with curtido and salsa roja.
