Pulinkari is a traditional South Indian stew that originates from the fertile lands of Kerala, India. Ingredients

  • tamarind pulp – 1/2 cup / 120 g
  • turmeric powder – 1/2 teaspoon
  • chili powder – 1 teaspoon
  • salt – to taste
  • jaggery – 1 tablespoon / 15 g
  • mixed vegetables (e.g., pumpkin, drumsticks, carrots) – 2 cups / 300 g, chopped
  • coconut oil – 2 tablespoons / 30 ml
  • mustard seeds – 1 teaspoon
  • curry leaves – 10 leaves
  • green chilies – 2, slit
  • asafoetida (hing) – 1/4 teaspoon

Instructions

  1. In a pot, combine tamarind pulp, turmeric powder, chili powder, salt, jaggery, and vegetables.
  2. Add 2 cups of water and bring to a boil. Simmer for 15-20 minutes until vegetables are tender.
  3. In a separate pan, heat coconut oil. Add mustard seeds and let them splutter.
  4. Add curry leaves, green chilies, and asafoetida to the oil. Fry briefly until fragrant.
  5. Pour the seasoned oil and spices over the simmering stew.
  6. Mix well and adjust seasoning if necessary. Serve hot with rice.
