Ingredients

  • all-purpose flour – 2 cups / 260 g
  • unsalted butter, chilled – 1 cup / 225 g
  • ice-cold water – 6-8 tbsp / 90-120 ml
  • ground beef – 500 g / 1.1 lbs
  • onion, finely chopped – 1 medium
  • green bell pepper, finely chopped – 1 medium
  • garlic cloves, minced – 3 cloves
  • tomato paste – 2 tbsp / 30 g
  • fresh thyme – 1 tsp / 5 g
  • habanero pepper, optional – 1 small
  • salt – to taste
  • black pepper – to taste
  • egg yolk, for glazing – 1
  • water – 1 tbsp / 15 ml

Instructions

  1. In a large bowl, mix flour and diced chilled butter with your fingertips until the mixture resembles coarse crumbs.
  2. Add ice-cold water gradually, mixing until a dough forms. Divide in half, wrap each with plastic, and chill for at least 1 hour.
  3. In a pan over medium heat, cook the onion, bell pepper, and garlic until soft. Add ground beef and cook until browned.
  4. Add tomato paste, thyme, habanero (if using), salt, and black pepper to taste. Cook until the mixture thickens.
  5. Preheat the oven to 400°F (200°C). Roll out the dough on a floured surface to 1/8 inch thick and cut into squares.
  6. Place a spoonful of filling in the center of each square, fold over to form a triangle, and press the edges to seal.
  7. Mix egg yolk with 1 tbsp of water; brush over the pastries.
  8. Bake for 25-30 minutes or until golden brown. Serve warm.
