Pršunate – Classic

Pršunate are a delightful pastry hailing from the picturesque coasts of Croatia. Known for their light and flaky texture, these pastries boast a rich history rooted in the regions where Mediterranean flavors meet the culinary influences of Central Europe. Ingredients

  • all-purpose flour – 2 cups / 240 g
  • unsalted butter – 1 cup / 227 g, chilled and cubed
  • salt – 1/2 tsp
  • cold water – 6 tbsp / 90 ml
  • egg – 1, beaten
  • pršut (prosciutto) – 150 g, thinly sliced
  • grated Parmesan cheese – 1/2 cup / 50 g
  • fresh parsley – 2 tbsp, chopped

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the flour and salt. Add the chilled butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  3. Gradually add the cold water, mixing just until the dough comes together. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  4. Roll out the chilled dough on a lightly floured surface to a thickness of about 1/8 inch (3 mm).
  5. Cut the dough into squares roughly 4 inches (10 cm) on each side. Lay a slice of pršut, a sprinkle of Parmesan, and a pinch of parsley in the center of each square.
  6. Fold the squares into triangles and press the edges to seal. Place them on the prepared baking sheet.
  7. Brush the tops with beaten egg and bake for 15-20 minutes, or until golden brown.
  8. Allow pastries to cool slightly before serving.

  • pršut (prosciutto) -> bacon or cooked ham
  • Parmesan cheese -> Pecorino Romano cheese
