Pršunate – Classic

Pršunate are a delightful pastry hailing from the picturesque coasts of Croatia. Ingredients
- all-purpose flour – 2 cups / 240 g
- unsalted butter – 1 cup / 227 g, chilled and cubed
- salt – 1/2 tsp
- cold water – 6 tbsp / 90 ml
- egg – 1, beaten
- pršut (prosciutto) – 150 g, thinly sliced
- grated Parmesan cheese – 1/2 cup / 50 g
- fresh parsley – 2 tbsp, chopped
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the flour and salt. Add the chilled butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
- Gradually add the cold water, mixing just until the dough comes together. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Roll out the chilled dough on a lightly floured surface to a thickness of about 1/8 inch (3 mm).
- Cut the dough into squares roughly 4 inches (10 cm) on each side. Lay a slice of pršut, a sprinkle of Parmesan, and a pinch of parsley in the center of each square.
- Fold the squares into triangles and press the edges to seal. Place them on the prepared baking sheet.
- Brush the tops with beaten egg and bake for 15-20 minutes, or until golden brown.
- Allow pastries to cool slightly before serving.
