Proja, or Projara, is a traditional Serbian corn bread that is a staple in Serbian cuisine. Made predominantly with cornmeal, Proja reflects the resourcefulness of Serbian culture and the beauty of simplicity in culinary practices.

Ingredients

  • cornmeal – 2 cups / 320 g
  • all-purpose flour – 1 cup / 130 g
  • baking soda – 1 teaspoon
  • baking powder – 1 teaspoon
  • salt – 1 teaspoon
  • milk – 2 cups / 480 ml
  • eggs – 2 large
  • feta cheese – 1 cup / 150 g, crumbled
  • vegetable oil – 1/2 cup / 120 ml
  • yogurt – 1/2 cup / 120 ml

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with vegetable oil.
  2. In a large mixing bowl, combine cornmeal, flour, baking soda, baking powder, and salt.
  3. In another bowl, beat the eggs and then whisk in the milk, vegetable oil, and yogurt until well combined.
  4. Slowly add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
  5. Fold in the crumbled feta cheese.
  6. Pour the batter into the prepared baking dish and smooth the top.
  7. Bake for 30-35 minutes or until golden brown on top and a toothpick inserted into the center comes out clean.
  8. Allow to cool slightly before slicing and serving.
