Ingredients

  • pork loin – 2 lbs / 900 g
  • olive oil – 2 tbsp / 30 ml

  • onion, sliced – 1 medium / 150 g
  • garlic cloves, minced – 2 cloves / 10 g
  • apple, sliced – 1 large / 200 g
  • pear, sliced – 1 large / 200 g
  • dried apricots, chopped – 1/2 cup / 75 g
  • chicken broth – 1.5 cups / 360 ml
  • fresh thyme – 1 tbsp / 3 g

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the pork loin with salt and black pepper. Heat olive oil in a large ovenproof skillet over medium-high heat.
  3. Sear the pork loin on all sides until golden brown, about 4 minutes per side. Remove and set aside.
  4. In the same skillet, add sliced onion and garlic; sauté until aromatic and translucent, about 5 minutes.
  5. Stir in sliced apple, pear, and chopped apricots. Cook for another 3-4 minutes until slightly softened.
  6. Pour in the chicken broth and add fresh thyme. Return the pork loin to the skillet.
  7. Transfer the skillet to the preheated oven and roast for 25-30 minutes or until the pork reaches an internal temperature of 145°F (63°C).
  8. Remove from oven and let the pork rest for at least 10 minutes before slicing. Serve with the fruit mixture spooned over the top.
