Ingredients

  • Pork belly – 5 lbs / 2.3 kg
  • Fresh rosemary – 3 sprigs
  • Fresh sage – 10 leaves
  • Garlic – 6 cloves, minced
  • Fennel seeds – 2 teaspoons
  • Black pepper – 1 tablespoon, freshly ground
  • Olive oil – 2 tablespoons
  • Salt – 1 tablespoon
  • Lemon zest – 1 lemon

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Lay the pork belly skin-side down. Score the flesh lightly with a sharp knife.
  3. In a small bowl, mix the minced garlic, rosemary, sage, fennel seeds, black pepper, salt, and lemon zest with the olive oil to form a paste.
  4. Spread the herb mixture evenly over the scored side of the pork.
  5. Roll the pork jelly-roll style, securing it tightly with kitchen twine every 2 inches.
  6. Place the rolled pork on a roasting rack in a roasting pan. Insert into the preheated oven.
  7. Roast the pork for approximately 3 hours, or until the internal temperature reaches 160°F (71°C) and the skin is golden and crisp.
  8. Remove from the oven and let it rest for at least 20 minutes before slicing.
