Instructions
- Preheat your oven to 325°F (165°C).
- Lay the pork belly skin-side down on a clean surface.
- In a small bowl, mix the fennel seeds, rosemary, minced garlic, salt, black pepper, olive oil, and lemon zest to form a paste.
- Spread the paste evenly over the meat side of the pork belly.
- Carefully roll the pork belly tightly and secure with kitchen twine at 1-inch intervals.
- Place the rolled pork belly on a rack in a roasting pan, skin-side up.
- Roast uncovered for 3 to 3.5 hours, or until the skin is crisp and the internal temperature reaches 160°F (71°C).
- Allow the porchetta to rest for 15 minutes before slicing and serving.
