Ingredients
- long-grain rice – 2 cups / 400 g
- lamb or beef, cubed – 500 g / 1.1 lbs
- ripe tomatoes, chopped – 3 medium / 450 g
- onion, finely chopped – 1 large / 200 g
- carrots, grated – 2 large / 250 g
- garlic cloves, whole – 5 cloves
- vegetable oil – 1/4 cup / 60 ml
- cumin seeds – 1 tsp
- salt – 2 tsp
- ground pepper – 1/2 tsp
- water – 3 cups / 720 ml
Instructions
- Rinse the rice thoroughly in cold water and soak for 30 minutes.
- Heat the vegetable oil in a large pot over medium-high heat. Add the cubed meat and sear until browned on all sides.
- Add the chopped onions and sauté until golden brown, then stir in the grated carrots and cook for 5 minutes.
- Mix in the chopped tomatoes and cumin seeds, cooking until the tomatoes break down and oil starts to separate.
- Drain the rice and add it to the pot, spreading it evenly over the meat and vegetables.
- Add garlic cloves and gently pour in the water, salt, and ground pepper without disturbing the rice layer.
- Bring to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes until the rice is tender.
- Turn off the heat, let it sit covered for another 10 minutes. Fluff the rice before serving.
