Ingredients

  • long-grain rice – 2 cups / 400 g
  • lamb or beef, cubed – 500 g / 1.1 lbs
  • ripe tomatoes, chopped – 3 medium / 450 g
  • onion, finely chopped – 1 large / 200 g
  • carrots, grated – 2 large / 250 g
  • garlic cloves, whole – 5 cloves
  • vegetable oil – 1/4 cup / 60 ml
  • cumin seeds – 1 tsp
  • salt – 2 tsp
  • ground pepper – 1/2 tsp
  • water – 3 cups / 720 ml

Instructions

  1. Rinse the rice thoroughly in cold water and soak for 30 minutes.
  2. Heat the vegetable oil in a large pot over medium-high heat. Add the cubed meat and sear until browned on all sides.
  3. Add the chopped onions and sauté until golden brown, then stir in the grated carrots and cook for 5 minutes.
  4. Mix in the chopped tomatoes and cumin seeds, cooking until the tomatoes break down and oil starts to separate.
  5. Drain the rice and add it to the pot, spreading it evenly over the meat and vegetables.
  6. Add garlic cloves and gently pour in the water, salt, and ground pepper without disturbing the rice layer.
  7. Bring to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes until the rice is tender.
  8. Turn off the heat, let it sit covered for another 10 minutes. Fluff the rice before serving.
