Ingredients

  • olive oil – 1/4 cup / 60 ml
  • chicken thighs and drumsticks – 8 pieces (about 2 1/2 – 3 lbs / 1.1 – 1.3 kg)

  • garlic cloves, minced – 4
  • tomato paste – 2 tbsp / 30 g
  • canned whole tomatoes – 1 can / 14 oz / 400 g, crushed
  • dry white wine – 1 cup / 240 ml
  • fresh rosemary springs – 3
  • bay leaf – 1
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Heat olive oil in a large, heavy skillet over medium-high heat.
  2. Season chicken with salt and pepper. Add to skillet and brown on all sides, then remove and set aside.
  3. In the same skillet, add the onion and sauté until soft and translucent.
  4. Stir in garlic and cook for an additional minute.
  5. Add tomato paste and cook for another 2 minutes, stirring frequently.
  6. Pour in the white wine, deglazing the pan, and let it reduce by half.
  7. Add the crushed tomatoes, rosemary, and bay leaf, then return chicken to the skillet.
  8. Reduce heat to low, cover, and let simmer for 35-40 minutes, until chicken is tender and cooked through.
  9. Adjust seasoning with salt and pepper before serving.
