Ingredients

  • chicken thighs – 6 pieces / 900 g
  • olive oil – 3 tbsp / 45 ml
  • onion – 1 large / 200 g, chopped
  • red bell pepper – 1 large / 150 g, chopped
  • garlic – 4 cloves, minced
  • tomatoes – 2 large / 300 g, diced
  • dry white wine – 1 cup / 240 ml
  • chicken broth – 2 cups / 480 ml
  • bay leaves – 2
  • paprika – 1 tsp / 5 g
  • salt – 1 tsp / 6 g
  • black pepper – 1/2 tsp / 3 g
  • fresh parsley – 1/4 cup / 15 g, chopped

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season chicken thighs with salt and black pepper, then brown them on all sides, about 5 minutes per side. Remove and set aside.
  2. In the same pot, add chopped onions and red bell pepper. Sauté until onions are translucent, about 5 minutes.
  3. Add minced garlic and diced tomatoes. Cook until tomatoes soften, about 3 minutes.
  4. Pour in the white wine, scraping the bottom of the pot to release any browned bits. Let it simmer for 2 minutes.
  5. Return the chicken to the pot. Add chicken broth, bay leaves, and paprika. Bring to a boil.
  6. Reduce the heat to low, cover, and simmer for 45 minutes, or until chicken is fully cooked and tender.
  7. Adjust seasoning with additional salt and pepper if necessary and stir in chopped parsley just before serving.
