  • white wine – 1/2 cup / 120 ml
  • canned tomatoes – 1 can / 400 g
  • fresh rosemary – 2 sprigs
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken thighs with salt and pepper, then brown them in the skillet for about 5 minutes on each side. Remove and set aside.
  3. Add chopped onion and garlic to the skillet and sauté until softened.
  4. Slice bell peppers into strips and add them to the skillet. Cook until they start to soften.
  5. Pour in the white wine to deglaze the pan, scraping up any browned bits.
  6. Add the canned tomatoes and bring to a simmer.
