Pączki are traditional Polish doughnuts, indulged in during the festivities leading up to Lent, particularly on Fat Thursday. Ingredients

  • all-purpose flour – 4 cups / 520 g
  • caster sugar – 1/2 cup / 100 g
  • whole milk – 1 cup / 240 ml
  • unsalted butter – 1/4 cup / 60 g, melted
  • active dry yeast – 2 1/4 teaspoons
  • large eggs – 2, beaten
  • egg yolk – 1
  • salt – 1/2 teaspoon
  • vanilla extract – 1 teaspoon
  • fruit preserve or marmalade – 1 cup / 250 g
  • vegetable oil – for frying
  • powdered sugar – for dusting

Instructions

  1. Warm the milk to about 110°F (43°C) and dissolve the yeast in it. Let it sit for about 5 minutes until it becomes foamy.
  2. In a large bowl, mix together the flour, sugar, and salt.
  3. Add the milk mixture, beaten eggs, egg yolk, vanilla, and melted butter to the dry ingredients and mix until a sticky dough forms.
  4. Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1-1.5 hours.
  6. Punch down the dough and roll it out to about 1/2 inch thickness. Cut out circles using a round cutter.
  7. Place a teaspoon of filling on half of the dough circles, cover with the remaining dough circles, and press the edges to seal.
  8. Heat oil in a deep fryer or large pot to 350°F (175°C) and fry doughnuts in batches until golden brown, about 2-3 minutes per side.
  9. Drain on paper towels and dust generously with powdered sugar.
