Instructions

- Gradually whisk in the cornmeal, reducing the heat to low. Cook, stirring constantly, until the polenta thickens, about 30 minutes. Set aside, keeping it warm.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add cherry tomatoes and cook until they start to soften, about 3-4 minutes.
- Season the cod fillets with salt and place them in the skillet. Cook for 3-4 minutes on each side until the fish is opaque and flakes easily.
- Drizzle lemon juice over the fish and tomatoes. Remove from heat.
