The term ‘point & kill’ refers to the process where diners select their live fish at local markets, often tilapia or catfish, which is then prepared fresh on the spot. This ensures the soup’s unparalleled freshness and depth of flavor. Ingredients
- Fresh catfish – 2 pounds / 900 g
- Water – 4 cups / 960 ml
- Palm oil – 1/4 cup / 60 ml
- Onions, chopped – 1 cup / 150 g
- Tomatoes, pureed – 2 cups / 400 g
- Scotch bonnet peppers, finely chopped – 2 pieces
- Garlic, minced – 4 cloves
- Ginger, minced – 1 tablespoon / 15 g
- Okra, sliced – 1 cup / 150 g
- Bitter leaves or spinach, chopped – 2 cups / 60 g
- Seasoning cubes – 2 cubes
- Salt – to taste
Instructions
- Clean the catfish thoroughly; cut into chunks and set aside.
- In a large pot, bring water to a boil and add the catfish chunks.
- Reduce the heat and simmer the fish until tender, approximately 10 minutes.
- In another pan, heat palm oil and sauté onions until translucent.
- Add pureed tomatoes to the pan and cook until the sauce thickens.
- Stir in the Scotch bonnet peppers, garlic, and ginger; cook for another 5 minutes.
- Pour the sauce into the pot with the fish and add the okra, bitter leaves, and seasoning cubes.
- Simmer for about 15 minutes until the vegetables are cooked and flavors are well combined.
- Season with salt to taste and serve hot.
