Ingredients
- pork loin – 2 lbs / 900 g
- orange juice – 1 cup / 240 ml
- lime juice – 1/2 cup / 120 ml
- vegetable oil – 2 tbsp / 30 ml
- white onion – 1 large
- sour orange juice – 1/4 cup / 60 ml
- salt – 1 tsp / 5 g
- black pepper – 1/2 tsp / 3 g
- garlic – 4 cloves
- tomato – 1 large
- cilantro – 1/2 cup / 30 g, chopped
Instructions
- Thinly slice the pork loin into 1/4 inch thick pieces.
- In a mixing bowl, combine orange and lime juice, 2 cloves of minced garlic, salt, and pepper.
- Marinate the pork slices in the juice mixture for at least 1 hour in the refrigerator.
- Meanwhile, thinly slice the onion and let it soak in the sour orange juice with a pinch of salt.
- Grill the pork slices over medium-high heat for 3-5 minutes on each side until cooked through.
- While grilling, roast the tomato in a dry skillet until slightly charred, then chop it finely.
- Mix the roasted tomato with remaining minced garlic and chopped cilantro to create a salsa.
- Serve the grilled pork with pickled onions on top and a generous side of tomato-cilantro salsa.
