Ingredients

  • White rice – 2 cups / 400 g
  • Macaroni pasta – 1 cup / 140 g
  • Mayonnaise – 1 cup / 240 g
  • Carrots – 1/2 cup, shredded / 60 g
  • Green onions – 1/4 cup, sliced / 25 g
  • Soy sauce – 1/4 cup / 60 ml
  • Ground ginger – 1 teaspoon
  • Sugar – 2 tablespoons / 25 g
  • Garlic cloves – 2, minced
  • Chicken thighs – 1.5 lbs / 680 g
  • Vegetable oil – 2 tablespoons
  • Salt – to taste
  • Pepper – to taste

Instructions

  1. Cook the rice according to package instructions. Set aside.
  2. Cook the macaroni in salted water until al dente. Rinse with cold water and drain.
  3. In a bowl, combine mayonnaise, shredded carrots, and sliced green onions. Mix with the macaroni to make the macaroni salad.
  4. In a separate bowl, mix soy sauce, ground ginger, sugar, minced garlic, salt, and pepper. Add chicken thighs and marinate for 30 minutes.
  5. Heat vegetable oil in a pan over medium heat. Cook the marinated chicken thighs until golden brown on both sides and fully cooked, about 6-8 minutes per side.
  6. Serve a scoop of rice, a portion of macaroni salad, and a piece of chicken on each plate.
