Ingredients

  • plaice fillets – 4 fillets / 600 g

  • sparkling water – 1 cup / 240 ml
  • sea salt – 1 tsp / 5 g
  • vegetable oil – for frying
  • russet potatoes – 4 large / 800 g
  • malt vinegar – to taste
  • lemon wedges – for serving
  • tartar sauce – for serving

Instructions

  1. Preheat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  2. Peel and cut the potatoes into thick chips. Rinse them under cold water to remove excess starch. Pat dry with a clean towel.
  3. Fry the chips in batches for about 5-6 minutes until they are tender but not yet browned. Remove and drain on paper towels.
  4. In a bowl, mix flour, cornmeal, baking powder, and salt. Gradually add sparkling water, stirring until a smooth batter forms.
  5. Pat the plaice fillets dry with paper towels. Dip each fillet into the batter, allowing excess to drip off.
  6. Fry the battered fillets in the preheated oil for 4-5 minutes, turning once, until golden and crispy. Drain on paper towels.
  7. Increase the oil temperature to 375°F (190°C) and fry the pre-cooked chips again for 2-3 minutes until golden brown. Drain and season with salt.
  8. Serve the plaice fish and chips with lemon wedges, malt vinegar, and tartar sauce.
