Ingredients

  • Spinach – 500 g / 1 lb
  • Walnuts – 200 g / 1 cup
  • Garlic – 3 cloves
  • Cilantro – 30 g / 1 oz
  • Vinegar – 2 tbsp
  • Salt – to taste
  • Pepper – to taste
  • Pomegranate seeds – for garnish

Instructions

  1. Blanch the spinach in boiling water for 2-3 minutes, then drain and squeeze out excess water.
  2. In a food processor, combine the walnuts, garlic, cilantro, vinegar, salt, and pepper. Blend until smooth.
  3. Add the spinach to the food processor and blend until the mixture is well combined and smooth.
  4. Adjust seasoning to taste, adding more salt or pepper if needed.
  5. Transfer the mixture to a serving dish and garnish with pomegranate seeds.
  6. Serve with flatbread or crackers.
