Ingredients

  • chickpeas – 1 cup / 200 g, soaked overnight
  • onion – 1 large, finely chopped
  • tomato – 1 medium, finely chopped
  • fresh mint – 1/4 cup / 10 g, chopped
  • fresh parsley – 1/4 cup / 10 g, chopped
  • all-purpose flour – 1/2 cup / 60 g
  • olive oil – for frying
  • salt – to taste
  • black pepper – to taste
  • ground cumin – 1 tsp
  • baking powder – 1 tsp

Instructions

  1. Drain and rinse the chickpeas thoroughly after soaking.
  2. In a food processor, coarsely grind the chickpeas. Transfer to a large mixing bowl.
  3. Add the chopped onion, tomato, mint, parsley, cumin, salt, and pepper to the bowl and mix well.
  4. Add the flour and baking powder to the mixture, stirring until combined. The mixture should be thick enough to hold together; adjust flour if necessary.
  5. Heat olive oil in a large skillet over medium-high heat.
  6. Form small patties with the chickpea mixture and fry them in the hot oil until golden and crispy on both sides, about 3-4 minutes per side.
  7. Remove and drain on paper towels. Serve hot.

  • fresh mint -> dried mint – 1 tbsp
  • olive oil -> vegetable oil
