This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Pissaladière is a traditional Provençal dish from the south-eastern region of France, particularly Nice. This savory tart captures the essence of the Mediterranean with its delightful combination of caramelized onions, anchovies, and olives on a crispy bread-like crust. Pissaladière is often enjoyed as an appetizer or a main dish, its warm and aromatic flavors evoking the sun-drenched shores of the Côte d’Azur.
Ingredients
- all-purpose flour – 2 cups / 240 g
- active dry yeast – 2 1/4 tsp / 7 g
- warm water – 1/2 cup / 120 ml
- olive oil – 3 tbsp / 45 ml
- sugar – 1/2 tsp / 2 g
- salt – 1/2 tsp / 3 g
- yellow onions – 4 large / 1 kg
- extra virgin olive oil – 2 tbsp / 30 ml
- fresh thyme – 1 tsp / 1 g
- anchovy fillets – 12 pieces
- black olives – 1/2 cup / 75 g
- black pepper – to taste
Instructions
- In a small bowl, dissolve the yeast and sugar in warm water and let stand until frothy, about 5 minutes.
- In a large bowl, mix together the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix to form a dough.
- Knead the dough on a floured surface for about 10 minutes until it is smooth and elastic. Place in an oiled bowl, cover, and let rise in a warm place until doubled in size, about 1 hour.
- While the dough is rising, prepare the onions. Slice them thinly and cook with the extra virgin olive oil, thyme, and a pinch of salt in a large skillet over low heat. Stir occasionally until onions are browned and caramelized, about 30 minutes.
- Preheat the oven to 400°F (200°C).
- Punch down the dough, then roll it out on a floured surface to fit a rectangular baking sheet.
- Transfer the dough to the baking sheet. Spread the caramelized onions evenly over the dough.
- Arrange the anchovy fillets and olives over the onions. Sprinkle with black pepper.
- Bake in the preheated oven for about 15 to 20 minutes, or until the crust is golden brown.
- Allow to cool slightly, slice into rectangles, and serve warm.
Substitutions
- all-purpose flour -> whole wheat flour
- anchovy fillets -> capers
- black olives -> green olives
Enhancements in the Next Evolution
- Add a thin layer of Dijon mustard on the crust before adding the onions.
- Incorporate a splash of white wine in the onions while caramelizing for added depth of flavor.
- Use a mix of half bread flour and half all-purpose flour for a chewier crust.
