Ingredients
- fresh river fish (such as surubí or pati) – 500 g / 1 lb
- vegetable oil – 2 tablespoons
- onion, chopped – 1 large
- garlic cloves, minced – 3
- red bell pepper, chopped – 1
- tomato, chopped – 2
- water – 1.5 liters / 6 cups
- bay leaf – 1
- fresh parsley, chopped – 2 tablespoons
- salt – to taste
- black pepper – to taste
Instructions
- Heat the oil in a large pot over medium heat. Add the chopped onion and bell pepper, sauté until softened, about 5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Stir in the chopped tomatoes and continue to cook until they begin to break down, about 5 minutes more.
- Pour in the water, add the bay leaf, and bring the mixture to a boil.
- Add the fish fillets to the pot, reduce the heat to low, and let it simmer for about 20 minutes, or until the fish is cooked through.
- Season with salt and black pepper to taste.
- Garnish with chopped parsley before serving hot.
