Pique Macho is a beloved meat dish hailing from Bolivia, renowned for its hearty and bold flavors. The dish is said to have originated in Cochabamba in the mid-20th century. It combines a variety of ingredients such as beef, sausage, and vegetables, resulting in a satisfying and robust meal. It’s a communal dish often shared among friends and family, symbolizing warmth and hospitality. Traditionally, this dish is spicy, reflecting the machismo or ‘macho’ aspect of its name, suggesting that only a ‘macho’ can handle its intense flavors.
Ingredients
- beef sirloin – 1 lb / 450 g
- chorizo sausage – 2 links / 200 g
- onion – 1 large, sliced
- tomatoes – 2 medium, chopped
- potatoes – 2 large, peeled and cubed
- green bell pepper – 1, sliced
- jalapeño pepper – 1, seeded and sliced
- garlic – 2 cloves, minced
- vegetable oil – 2 tbsp
- soy sauce – 2 tbsp
- sea salt – to taste
- black pepper – to taste
Instructions
- In a large pan over medium heat, add vegetable oil. Sauté the onions until translucent.
- Add garlic, cooking until fragrant. Increase heat to high and add beef sirloin, season with salt and pepper. Stir-fry until browned.
- Add chorizo sausage slices, cook for 5 minutes. Stir in tomatoes, green bell pepper, and jalapeño. Cook for another 5 minutes.
- Add soy sauce and simmer for 10 minutes, allowing the flavors to meld.
- Meanwhile, fry potatoes until golden brown. Drain and set aside.
- To serve, place fried potatoes on a plate and top with meat and vegetable mixture.
