Ingredients
- pumpkin seeds – 1 cup / 140 g
- tomatillos – 5 medium / 600 g
- jalapeño – 1 medium
- cilantro – 1 cup / 30 g
- onion – 1 small / 70 g
- garlic cloves – 2 large
- vegetable oil – 2 tablespoons / 30 ml
- chicken broth – 2 cups / 480 ml
- salt – to taste
Instructions
- Toast pumpkin seeds in a skillet over medium heat until they pop and become golden, about 5 minutes.
- Remove seeds and let them cool. Heat oil in the same skillet.
- Add tomatillos, jalapeño, onion, and garlic, and sauté until softened, about 7 minutes.
- Blend the sautéed mixture with toasted pumpkin seeds and cilantro until smooth. Gradually add chicken broth to reach a creamy consistency.
- Return the sauce to the skillet; simmer for 10 minutes. Season with salt to taste.
