Pinnekjøtt, a traditional meat dish hailing from Norway, is particularly beloved during the Christmas season. It features salted and dried lamb ribs that are steamed to succulent perfection, offering a glimpse into Norway’s rich culinary heritage. Often served with potatoes and rutabaga mash, Pinnekjøtt combines simple yet bold flavors, reflecting the resourcefulness and culinary traditions of Norway’s cold climate.

Ingredients

  • Salted and dried lamb ribs – 1.5 kg / 3.3 lbs
  • Potatoes – 1 kg / 2.2 lbs
  • Rutabaga – 1 kg / 2.2 lbs
  • Butter – 75 g / 5 tbsp
  • Whole milk – 250 ml / 1 cup
  • Salt – 1 tsp
  • Ground black pepper – 1 tsp

Instructions

  1. Soak the salted lamb ribs in water for at least 24 hours to remove excess salt, changing the water once during the process.
  2. Place a rack at the bottom of a large pot; lay the soaked ribs over the rack.
  3. Steam the ribs gently over low heat for about 3 hours, until the meat is tender and falling off the bone.
  4. Meanwhile, peel and chop the rutabaga into chunks, then boil in salted water until tender, about 30 minutes.
  5. Mash the rutabaga with butter, milk, salt, and pepper until smooth and creamy.
  6. Boil the potatoes until tender, about 20 minutes, then drain and serve alongside the ribs and mashed rutabaga.

Substitutions

  • Salted and dried lamb ribs -> Fresh lamb ribs (must be salted separately)
  • Rutabaga -> Turnip or carrot
  • Whole milk -> Cream or a plant-based milk
