Ingredients
- Whole fish (such as tilapia or snapper) – 1.5 lb / 680 g
- Lemongrass stalks (finely chopped) – 2
- Garlic cloves (minced) – 4
- Shallots (finely chopped) – 2 medium
- Fresh lime juice – 3 tbsp / 45 ml
- Fish sauce – 2 tbsp / 30 ml
- Chili flakes – 1 tsp / 5 g
- Fresh coriander – 1/4 cup / 15 g, chopped
- Banana leaves – For wrapping (substitute with aluminum foil)
Instructions
- Clean the fish thoroughly and pat dry with paper towels.
- In a small bowl, mix together the lemongrass, garlic, shallots, lime juice, fish sauce, chili flakes, and fresh coriander to create a marinade.
- Score the fish on both sides and rub the marinade all over, ensuring it penetrates the slits.
- Wrap the fish securely in banana leaves (or aluminum foil if unavailable).
- Preheat a grill to medium-high heat and grill the fish for 20-25 minutes, turning once, until cooked through and the flesh is flaky.
- Serve the fish hot with sticky rice and a side of fresh herbs or vegetables.
