Ingredients
- pineapple chunks – 2 cups / 300 g
- tamarind paste – 2 tablespoons / 30 g
- jaggery – 2 tablespoons / 30 g
- turmeric powder – 1/2 teaspoon
- curry leaves – 10-12 leaves
- mustard seeds – 1 teaspoon
- urad dal – 1 teaspoon
- dried red chilies – 2 whole
- green chili – 1, slit
- coriander powder – 1 teaspoon
- cumin seeds – 1/2 teaspoon
- vegetable oil – 1 tablespoon / 15 ml
- salt – to taste
Instructions
- In a pan, heat the vegetable oil over medium heat.
- Add mustard seeds, and once they splutter, add urad dal, curry leaves, dried red chilies, and slit green chili. Sauté for 1-2 minutes until fragrant.
- Add pineapple chunks and sauté for 3-4 minutes.
- Mix in turmeric powder, coriander powder, and cumin seeds.
- Dissolve tamarind paste and jaggery in a cup of water, and pour it into the pan.
- Add salt to taste, and let the mixture simmer for 10-15 minutes until the pineapple is tender and the flavors meld.
