Ingredients

  • Taro leaves – 12 large leaves
  • Pork belly, cubed – 300 g / 10 oz
  • Coconut milk – 1 can / 400 ml
  • Coconut cream – 1 cup / 240 ml
  • Red chili, sliced – 2 pieces
  • Ginger, sliced – 1 thumb size
  • Onion, chopped – 1 medium onion
  • Garlic cloves, minced – 3 cloves
  • Shrimp paste (bagoong) – 2 tbsp
  • Salt – to taste

Instructions

  1. Rinse taro leaves thoroughly and set aside to drain.
  2. In a pot, sauté garlic, onion, and ginger until fragrant.
  3. Add pork belly and cook until lightly browned.
  4. Mix in shrimp paste and red chili, stir well.
  5. Pour in coconut milk and bring to a gentle simmer.
  6. Arrange the taro leaves in layers over the pork mixture.
  7. Pour coconut cream over the top and season with salt.
  8. Cover and simmer on low heat for 30-40 minutes, until leaves are tender.
  9. Serve hot with steamed rice.
