Ingredients

  • Whole chicken – 1.2 kg / 2.6 lbs
  • Pickled limes – 2 whole
  • Lemongrass stalks – 2, bruised
  • Kaffir lime leaves – 4
  • Galangal – 5 slices
  • Fish sauce – 3 tbsp
  • Salt – 1 tsp
  • Fresh cilantro – 1 bunch, chopped
  • Water – 8 cups / 1.9 liters
  • Bird’s eye chilies – 3, finely sliced

Instructions

  1. In a large pot, combine water, whole chicken, lemongrass, galangal, and kaffir lime leaves. Bring to a boil, then reduce heat and simmer for 45 minutes, skimming off any foam.
  2. Remove chicken from the pot and let cool slightly. Shred the chicken meat and set aside.
  3. Strain the broth to remove solids, returning clear broth to the pot.
  4. Add pickled limes to the broth, simmer for additional 10 minutes to infuse the flavor.
  5. Stir in fish sauce and salt to taste.
  6. Return shredded chicken to the pot. Add bird’s eye chilies.
  7. Ladle the soup into bowls and garnish with fresh cilantro.
