Ingredients

  • chicken thighs – 1 kg / 2.2 lbs
  • vegetable oil – 2 tbsp
  • onion – 2 large, finely chopped
  • garlic – 4 cloves, minced
  • aji amarillo paste – 3 tbsp
  • cumin – 1 tsp
  • paprika – 1 tsp
  • chicken broth – 500 ml / 2 cups
  • potatoes – 2 medium, peeled and quartered
  • peas – 1/2 cup / 75 g
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chicken thighs and brown on all sides. Remove and set aside.
  2. In the same pot, add onion and garlic; sauté until the onion becomes translucent.
  3. Stir in the aji amarillo paste, cumin, and paprika; cook for an additional minute until fragrant.
  4. Return the chicken to the pot and pour in the chicken broth, stirring to combine.
  5. Add the potatoes and bring to a gentle boil. Reduce heat to a simmer, cover, and cook for 25-30 minutes or until the chicken is cooked through and the potatoes are tender.
  6. Stir in the peas and simmer for an additional 5 minutes. Season with salt and black pepper to taste.
  7. Serve hot, optionally with rice.
