Ingredients

  • Langostinos (prawns) – 1 lb / 450 g
  • Ají amarillo paste – 2 tbsp
  • Onion, finely chopped – 1 cup / 130 g
  • Garlic, minced – 2 cloves
  • Tomatoes, chopped – 1 cup / 180 g
  • Fish stock – 2 cups / 480 ml
  • Heavy cream – 1/2 cup / 120 ml
  • Olive oil – 2 tbsp
  • Cilantro, chopped – 1/4 cup / 20 g
  • Salt and pepper – to taste
  • Lime juice – 1 tbsp

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, sauté until translucent.
  2. Add the ají amarillo paste and cook for another 2 minutes to release its flavor.
  3. Stir in the chopped tomatoes and cook until they soften.
  4. Pour in the fish stock and bring to a simmer.
  5. Add the langostinos and cook until they turn pink and opaque, about 5 minutes.
  6. Lower the heat and stir in the heavy cream, salt, and pepper. Simmer gently.
  7. Finish with a squeeze of lime juice and garnish with chopped cilantro before serving.
