Picante de Carne is a robust and spicy Peruvian stew, deeply rooted in the Andean highlands. Traditionally, this dish marries tender cuts of beef with a vibrant array of spices, potatoes, and aji peppers to create a harmonious blend of heat and flavor. It is a staple in Peruvian households, known for its comforting and hearty nature, making it ideal for large gatherings or family meals. Ingredients
- beef stew meat – 1 lb / 450 g
- potatoes – 2 large / 500 g, peeled and diced
- aji amarillo paste – 2 tbsp / 30 g
- onion – 1 large / 150 g, finely chopped
- garlic cloves – 3 / 15 g, minced
- vegetable oil – 2 tbsp / 30 ml
- beef broth – 2 cups / 480 ml
- cumin – 1 tsp / 2.5 g
- paprika – 1 tsp / 2.5 g
- salt – to taste
- black pepper – to taste
- fresh cilantro – 1/4 cup / 15 g, chopped
Instructions
- Heat the vegetable oil in a large pot over medium-high heat.
- Add the beef stew meat and cook until browned on all sides. Remove the beef and set aside.
- In the same pot, add the onions and cook until translucent.
- Stir in the garlic, cumin, paprika, and aji amarillo paste. Cook for 1-2 minutes until fragrant.
- Return the beef to the pot and add the beef broth. Bring to a boil, then reduce heat to low and simmer for 45 minutes.
- Add the potatoes and continue to cook for another 20 minutes or until the potatoes are tender.
- Season with salt and black pepper to taste.
- Stir in fresh cilantro just before serving.
