Ingredients
- blanched almonds – 1/4 cup / 30 g
- hazelnuts – 1/4 cup / 30 g
- garlic cloves – 2 cloves
- day-old bread – crust removed – 1 slice
- fresh parsley – 1/4 cup / 15 g
- olive oil – 2 tablespoons / 30 ml
- saffron threads – a pinch
- salt – to taste
- pepper – to taste
Instructions
- Toast the almonds and hazelnuts in a skillet over medium heat until golden and fragrant. Set aside to cool.
- In the same skillet, add a tablespoon of olive oil and fry the bread until golden. Remove and let cool.
- In a mortar and pestle, crush the garlic cloves with the toasted nuts until a coarse paste forms.
- Add the fried bread and continue to crush until combined.
- Incorporate the fresh parsley, saffron threads, salt, and pepper, grinding until well mixed.
- Add the remaining olive oil slowly while mixing to bind the ingredients into a smooth paste.
- Taste and adjust seasoning if necessary.
